Quinoa Avocado Kale Salad

This salad is more than just leaves so won’t leave you hungry. Based on a bed of quinoa it provides carbohydrate and protein as well as protein and healthy fats from the avocado.

  • 60g quinoa
  • 3 handfuls kale
  • sea salt
  • olive oil
  • 8 cherry tomatoes, halved
  • 1 handful pomegranate seeds
  • 1/2 avocado, chopped
  • 1/4 lemon


  • Cook quinoa and leave to cool
  • Place kale in bowl with some sea salt and drizzle of olive oil. Massage the kale until softened
  • Place cooled quinoa on plate, top with kale, tomatoes, avocado and pomegranate seeds
  • Squeeze the juice of lemon over the salad and enjoy
