Pesto sun-dried tomato & mushroom sandwich

Ingredients

  • 2 slices of fresh bread (GF if needed)
  • pesto from my pesto recipe see hereĀ Pesto
  • 3 sun-dried tomatoes (sliced)
  • handful of mushrooms (sliced)
  • 2 lettuce leaves
  • sea salt
  • olive oil

Method

  • fry the mushrooms in a little olive oil and a pinch of salt until soft
  • toast the bread (buy good quality fresh from a bakery rather than processed sliced loaves)
  • place a lettuce leaf on each piece of toast
  • top with some pesto, the sun-dried tomatoes and cooked mushrooms
