Ingredients
- 2 slices of fresh bread (GF if needed)
- pesto from my pesto recipe see hereĀ Pesto
- 3 sun-dried tomatoes (sliced)
- handful of mushrooms (sliced)
- 2 lettuce leaves
- sea salt
- olive oil
Method
- fry the mushrooms in a little olive oil and a pinch of salt until soft
- toast the bread (buy good quality fresh from a bakery rather than processed sliced loaves)
- place a lettuce leaf on each piece of toast
- top with some pesto, the sun-dried tomatoes and cooked mushrooms
