Turkey & Cranberry Burger

Enjoy these festive burgers at Xmas or any time of year. If you’re eating them after Xmas and using up leftover turkey you can use cooked turkey instead of raw meat. Turkey is an excellent protein source and these make a very filling meal.

Ingredients

  • 300g turkey meat
  • 1 red onion
  • 2 cloves garlic
  • 2 dessert spoons cranberry sauce
  • 50g buckwheat flour (adjust amount to obtain correct consistency of burger mix)
  • sea salt
  • olive oil

Method

  • Chop the onion and garlic, season with sea salt and pan fry in olive oil until softened
  • Place onion, garlic, turkey and cranberry sauce in a food processor
  • Add flour until mixture is a good consistency to make burgers. The amount needed will depend upon whether you are using raw meat or already cooked meat which is drier
  • Make 4 burger rounds
  • Place burgers in pan with olive oil and cook for 3-5 minutes on each side until cooked through
