Pea Fritters

Here is a way to jazz up your peas! Peas have a low glycemic load, are high in fibre, protein and antioxidant and anti-inflammatory phytonutrients . That’s pretty impressive and it makes them great for diabetics. They can be enjoyed as a side or are filling enough as a small meal.  They can be made into mini fritters and dipped into hummus or pesto.

Ingredients

  • 200g defrosted peas
  • 2 eggs
  • 1 tbsp coconut flour
  • 1 tbsp chopped parsley
  • sea salt to season
  • olive oil for cooking

Method

  • Roughly blend peas in processor or mash them with a potato masher
  • Mix together mashed peas with all the other ingredients in a bowl, except keep some of the egg back as more can be added to obtain the correct consistency
  • Mould into fritters and cook at a low heat in pan with olive oil until both sides are browned and heated throughout
