Xmas Sandwich

A sandwich can be nutritious. This sandwich uses leftovers from xmas and is delicious. I always use wholemeal bread to ensure a good dose of fibre and fill it with plenty of protein and brightly coloured cranberries and red cabbage to top up on antioxidants.

Ingredients

  • 2 slices wholemeal bread (gluten free optional)
  • olive oil or butter

Suggested filling

  • red cabbage
  • brie (not if DF)
  • cranberry sauce
  • cooked bacon (preferably nitrate free)
  • cooked turkey
  • salad leaves

Method

  • Chop red cabbage and pan fry with olive oil and sea salt until softened
  • Spread butter or olive oil on one side of each slice of bread and place in heated pan to brown. I prefer this to toasting as it gives a much crisper bread
  • Remove from pan and on the unbrowned side of one piece of bread place all the filling in layers
  • Top with the second piece of bread
