Ingredients
- 2 slices wholemeal bread (gluten free optional)
- olive oil or butter
Suggested filling
- red cabbage
- brie (not if DF)
- cranberry sauce
- cooked bacon (preferably nitrate free)
- cooked turkey
- salad leaves
Method
- Chop red cabbage and pan fry with olive oil and sea salt until softened
- Spread butter or olive oil on one side of each slice of bread and place in heated pan to brown. I prefer this to toasting as it gives a much crisper bread
- Remove from pan and on the unbrowned side of one piece of bread place all the filling in layers
- Top with the second piece of bread
