Paleo Granola

Make two batches as it will be very popular. The granola can be enjoyed alone, with some yogurt or almond milk!

  • 250g  walnuts
  • 200g  ground almonds
  • 150g  pumpkin seeds
  • 80g  desiccated coconut
  • 125g  goji berries
  • 1 egg, lightly beaten
  • 2 tbspns water
  • 3 tbspns coconut oil
  • 100g honey
  • 1 tspn vanilla extract
  • 3 tspns cinnamon
  • 1/2 tspns sea salt


  • Chop the nuts in a food blender (do not have to be completely ground)
  • Whisk the egg white and water until frothy
  • Combine all ingredients in a bowl and mix well
  • Place in oven-proof dish and bake at 160 degrees for 30 minutes.
  • Remove from oven and leave to cool for 30 minutes before placing in a sealed glass container.
