Ingredients
- 250g walnuts
- 200g ground almonds
- 150g pumpkin seeds
- 80g desiccated coconut
- 125g goji berries
- 1 egg, lightly beaten
- 2 tbspns water
- 3 tbspns coconut oil
- 100g honey
- 1 tspn vanilla extract
- 3 tspns cinnamon
- 1/2 tspns sea salt
Method
- Chop the nuts in a food blender (do not have to be completely ground)
- Whisk the egg white and water until frothy
- Combine all ingredients in a bowl and mix well
- Place in oven-proof dish and bake at 160 degrees for 30 minutes.
- Remove from oven and leave to cool for 30 minutes before placing in a sealed glass container.
