Ingredients
- 1 courgette
- 2 tablespoons flax seed
- flour (buckwheat for gluten free) for coating courgette chips
- olive oil
Method
- Cut courgette into chip shapes and roll in the flour to coat
- Then roll the chips into the whisked egg and then the flax seed
- Pan fry the coated chips in olive oil until browned and crispy, turning throughout cooking
