Chicken Fried Rice
Quick, easy and satisfying comfort food. Kids love this one too. Give them some chopsticks and make it fun. Brown rice is a low glycaemic load food. Unlike refined white rice which is so processed it needs very little digestion and effects blood sugar levels quickly, brown rice is a complex slow releasing carb releasing its energy slowly.
Ingredients
- 1 onion
- 2 cloves garlic
- Olive oil for cooking
- 2teaspoons chopped fresh ginger
- Sea salt
- 2 chicken fillets diced into small pieces
- 150g brown basmati rice
- 250ml water
- 2 eggs
- 160g defroseted petit pois
- Toasted sesame oil
- 1 tablespoon Tamari soy sauce
Method
- Boil water in saucepan and when boiling add rice, reduce heat to a simmer and place lid on pan
- Leave rice to cook for approx. 25 mins adding a little more water if necessary. When cooked leave to cool
- Chop onion & garlic and fry with ginger and salt in a little olive oil
- Add chicken and stir fry until cooked
- Add cooled rice & peas
- Make circle in middle of pan. Break in eggs and scramble. When egg is cooked stir through into rest of contents of pan
- Stir and add tamari soy sauce and sesame oil for flavor
