Blueberry Overnight Oats

Oats contain beta-glucan a type of soluble fibre. This fibre binds to cholesterol in the gut, removing it from the body and avoiding it being absorbed into the bloodstream. The added protein from the pumpkin seeds make this a breakfast that will keep blood sugars balanced throughout the morning. Pumpkin seeds are also rich in zinc supporting the immune system.

Ingredients

  • 1/3 cup oats -gluten free if required
  • 2/3 cup milk; almond , dairy or other
  • 2 tablespoon pumpkin seeds
  • 2 tablespoon chia seeds
  • 2 medjool dates chopped
  • 2 handfuls blueberries plus a few for a topping
  • 4 tablespoons berry compote (blended mixed berries)
  • A few pumpkin seeds and blueberries for toppings

Method

  • Mix together the oats, milk, pumpkin seeds, chia seeds, blueberries and chopped dates
  • Place the mixture in a kilner jar or any container
  • Place lid on jar/container and place in fridge overnight
  • In the morning top with fruit compote, blueberries and pumpkin seeds
