Ingredients
- 600g turkey or chicken meat
- 2 red onions
- 4 cloves garlic
- olive oil
- 1 tspn turmeric
- 4cm grated fresh ginger
- 1 tspn curry powder
- 1 green chilli
- 400ml coconut milk
- 2 tbspns peanut butter
- fresh corriander
Method
- place chopped onions and garlic in pan with olive oil. Add the green chilli, turmeric, ginger and curry powder and cook on a low heat until the onion has softened
- if using raw meat add to pan and cook until sealed
- add coconut milk and peanut butter and simmer until sauce thickens and meat is cooked -approx 15 mins
- if using cooked meat add for a few minutes to heat through
- serve with fresh corriander
