Baked Fish with an Orange & Mango Marinade

This jazzes up white fish and gives it a Hawaiian twist. White fish is a lighter option, a good choice for lunch or a light supper. Serve with sautéed kale and your choice of complex carbs.

Cooking Time - 15 mins


  • 2 white fish fillets
  •  1/3 cup freshly squeezed orange juice
  • 1 mango flesh
  • 1 tbsp crushed green peppercorn
  • ½ small lemon juiced
  • ½ tspn cinnamon
  • 2 tbspns coconut cream
  • Sprinkle of desiccated coconut


  • Place orange juice, mango flesh, crushed peppercorns, lemon juice and cinnamon in blender and blend until smooth
  • Place fish in bake proof tray and with the marinade
  • Add coconut cream on top of marinade and sprinkle with some desiccated coconut
  • Bake in preheated oven at 175C for 15 minutes until fish cooked through
