Ingredients
- 2 white fish fillets
- 1/3 cup freshly squeezed orange juice
- 1 mango flesh
- 1 tbsp crushed green peppercorn
- ½ small lemon juiced
- ½ tspn cinnamon
- 2 tbspns coconut cream
- Sprinkle of desiccated coconut
Method
- Place orange juice, mango flesh, crushed peppercorns, lemon juice and cinnamon in blender and blend until smooth
- Place fish in bake proof tray and with the marinade
- Add coconut cream on top of marinade and sprinkle with some desiccated coconut
- Bake in preheated oven at 175C for 15 minutes until fish cooked through
